Dormition Fast

As an Orthodox Christian, one fasts according to the liturgical calendar in a semi-vegan diet (shellfish is allowed). This time it's for14 days.

I've decided to help those who wish to fast accordingly by writing a few quick recipes.

These recipes are simplified for the home cook.

Pray that I can keep it up!

Coconut Channa Masala

Serve over basmati Rice

1 c. Coconut milk

1 onion-minced

3 garlic cloves - minced

1 thumb of ginger -minced

1 tbs Curry powder

1/2 tsp Garam masala

1 tbs heaping, brown sugar

2 tbs soy sauce

1 cup cauliflower- diced

1 can chickpeas

2 tbs tomato paste

2-3 sprigs cilantro- roughly chopped

Sautee onions, then garlic and ginger. Add all other ingredients and simmer for 15-20 minutes. Taste and adjust for seasoning. Garnish with cilantro.
